This Shepard’s Pie recipe with curry and sweet potatoes was a beloved staple at my restaurant, Mana Juice. Meal Prep was my bread and butter for a steady 20 people and this was an easy go to meal I made often. I love making this recipe and it was a favorite; along with my Gumbo and Colorado Style Green Chili, and it was asked for over and over again. It’s a perfectly balanced dish and tastes even better the next day. Shepherd’s Pie is easy to prepare and can be made ahead of time for an easy weeknight dinner.

My “meat pie” recipe starts with my Mashed Sweet Potato Recipe. These mashed potatoes can be made in advance and I recommend making a double batch. They are a delicious vegan concoction loaded with outstanding flavor, antioxidants, vibrant color and a dreamy smooth texture. Purple sweet potatoes are 💯 times better than the orange yam variety. I mean, they both have a beautiful bright flesh that makes any dish pop but the purple potatoes are more dense giving you a much more satisfying texture, and the flavor is incomparable.

I used the purple potatoes (AKA Okinawan Sweet Potatoes) in my cafe a lot. For one, they are locally grown here in Hawaii (I really hope you can find them in your local grocery store, if not, try an Asian Market that sells produce). The best way to prepare these potatoes, if you have the patience, is to bake them with the skin on until soft, but not too soft. Just enough that you can slide the ugly skin right off. I would bake about a dozen at a time and refrigerate them because they are easier to cut when cold. On my menu I served local grass fed burgers with sweet potato fries… and my fries were the best! They were simple, beautiful and irresistible. The sweet potato fries were hand cut then pan seared in coconut oil with sea salt. That’s it!

Last thing about this sweet potato topping, and I promise to get on with it, they make the perfect side dish for grilled meats and roasted veggies. They are made with coconut milk and fresh ginger. Cilantro is a good substitute for ginger if you like a more mild bite. These mashed potatoes are my favorite dish next to my green bean casserole at Thanksgiving and the perfect topping to this Shepherd’s Pie Recipe!


Sweet Potato Topping

  • 2 lbs sweet potatoes 
  • 1/4 cup fresh ginger
  • 1 ½ tsp salt
  • ½ tsp black pepper
  • 1 can coconut milk

Yellow Curry Base

  • 1 tbsp coconut oil
  • 1 lb ground turkey
  • 3 tbsp yellow curry powder
  • 1 tbsp salt
  • 1 ½ tsp fennel seeds
  • 1 tsp ground cumin
  • ½ tsp cayenne pepper
  • ½ tsp black pepper
  • 2 tbsp fresh ginger
  • 2 tbsp garlic minced
  • 1 small onion
  • 2 medium carrots
  • 10 oz frozen sweet peas
  • ¼ cup butter
  • 2 cans coconut milk
  • 1 cup chicken stock
  • 1 tbsp chili garlic sauce
  • 2 tbsp corn starch
  • ¼ cup water

Enjoy the Process

This flavorful Shepherd’s Pie recipe starts with the topping. First, peel and chop sweet potatoes and boil until soft then puree with coconut milk and fresh ginger.

While the potatoes are boiling, peel and chop a few inches of fresh ginger root and add them to your food processor and pulse several times. Remove the lid, scrape the sides and run on high until the ginger is finely chopped.

Drain soft sweet potato chunks and add them to the food processor with the ginger and some salt and pepper. Pulse several times to get the chunks of potatoes small. You may need to remove the lid and smash them with your spatula. When the potatoes are small and crumbly run the food processor on low and add the coconut milk through the funnel. Now, run on high until the potatoes are smooth.

Set this aside and prepare the curry.

Curry in a Hurry

You can make the curry in a dutch oven and simply top the curry with sweet potatoes and bake directly in the DO. Or, make the curry in a soup pot, transfer it to a baking dish and go that route.

I’ll be honest here. This dish only looks like the picture after it has cooled in the pan, so…… the next day. If you have individual casserole dishes, now is the time to use them. It will hold together nicely and who doesn’t love there own hot dish straight from the oven? (If you don’t have a set, there is a set I love above you can purchase 😉)

Start the curry by melting coconut oil in a pot. Add the ground turkey and let it start to brown. As it’s cooking I like to add the spices: curry powder, fennel seeds, cumin, salt and pepper.

Then, add some onion, garlic and ginger and let cook for a few minutes until soft and fragrant.

Next, add some chopped carrots, frozen peas, coconut milk and chicken stock.

At this point, I like to add some butter because it adds to the rich flavor of the curry. Butter makes everything better!! IMO, but you do not have to add the butter if it’s not your thing or you just don’t have it….. You can just call me Butyraceous 😂

Simmer Down

Let this simmer down for awhile allowing the flavors to meld and the veggies to get nice and soft.

Spice it up

For more flavor and a kick, I like to add some garlic chili sauce or Siracha. Totally optional.

Now is a good time to pre-heat the oven to 350° BTW

After your curry has simmered for about 20 minutes, make a slurry with a little water and cornstarch in a separate cup or bowl and make sure to mix it nice and smooth before stirring into your boiling curry.

Now, turn off the heat and top this yummy curry with those vibrant pureed potatoes.

If you’re using the individual cocottes or a baking dish, carefully ladle the curry into the dish.

Dollop the curry with the pureed potatoes and carefully spread evenly over the top.

Cover and bake this delicious pie for about 30 minutes and then remove the cover to bake for another 15 minutes.

Remove the pie from the oven and let set for a few minutes before serving because if you cut into it too soon, you may be plating soup. It will still taste great, but not look as good as if you can wait. This is why those individual baking dishes are perfect for this dish.

Top with cilantro, unless you’re one of the 12% of people that think it tastes like soap….(if so, I am so sorry)

Sweet Potato Topping

  • 2 lbs sweet potatoes peeled, chopped and boiled
  • 1/4 cup fresh ginger root peeled and chopped
  • 1 ½ tsp salt
  • ½ tsp black pepper
  • 1 can coconut milk

Yellow Curry Base

  • 1 tbsp coconut oil
  • 1 lb ground turkey
  • 3 tbsp yellow curry powder
  • 1 tbsp salt
  • 1 ½ tsp fennel seeds

  • 2 tbsp fresh ginger root minced
  • 2 tbsp garlic minced
  • 2 cups yellow onion 1 small onion diced
  • 2 cups carrot 2 medium carrots diced
  • 10 oz frozen sweet peas
  • ¼ cup butter
  • 2 cans coconut milk
  • 1 cup chicken stock
  • 1 tbsp chili garlic sauce
  • 2 tbsp corn starch
  • ¼ cup water


Sweet Potato Topping

  • Peel, chop and boil sweet potatoes until soft, about 30-45 minutes.
  • Drain potatoes and set aside.
  • In a food processor, mince ginger. (You can mince an extra couple inches here for the curry base and set 2 tablespoons aside)
  • Scrape down the sides and mince ginger one more time for about 10 seconds on high.
  • Add boiled potatoes, salt and pepper.
  • Pulse several times until all the large chunks are gone.
  • Remove the lid and using a spatula, stir the potatoes to get any chunks off the blade.
  • Run the food processor on low for 30 seconds and funnel in the coconut milk.
  • Remove the lid, scrape the sides and run on high for 30 seconds and repeat until potatoes are smooth.

Yellow Curry Base

  • Melt coconut oil in a medium size pot or large dutch oven.
  • Add turkey, curry powder, salt, fennel seeds, cumin, cayenne and black pepper.
  • Brown turkey, stirring occasionally.
  • Add onion, ginger and garlic.
  • Cook for 5 minutes, stirring occasionally.
  • Add carrots, frozen peas, butter, coconut milk, chicken stock and chili garlic sauce.
  • Cook for 20 minutes stirring occasionally.
  • Mix cornstarch and water and stir into the simmering curry.
  • Preheat oven to 350°
  • Top Curry with sweet potato puree and spread gently and evenly over the top.
  • Bake Pie for 45 minutes.
  • Remove from the oven and let set for 10 minute.
  • Slice, serve and enjoy!
