This curry recipe was created while Phish played Dick’s Friday night and I was so grateful to be home. Texting friends at the show and chopping fresh onions, garlic and ginger. Recovering from The Gorge and Shoreline… I really needed that! That was my inspiration! Like many of us, I had lost connection with me, my goals, my life, my blog. After a long anticipated trip to see The Phish and spend the week with friends, I am inspired again! We got home Thursday evening, I slept all night, unpacked and cleaned house all day Friday. Feeling refreshed, I started planning dinner and a show. I bought the webcast for the shows at Dick’s and went straight to the kitchen.

I went to the little store down the road for greek yogurt, as my go to curry is Chicken Tikka Masala. They did not have any yogurt in the plain variety and I was not willing to go far from home. So, I just grabbed some fresh cilantro, a bottle of Prosecco and decided to make do. This yellow chicken curry recipe is so satisfying and just what we needed after 6 long nights on tour. Enjoy!


  • 3 tbsp butter
  • 2 tbsp coconut oil
  • 1 ½ cups sweet onion diced
  • 5 cloves garlic chopped
  • 2 tbsp ginger root chopped
  • 2 lbs chicken drumsticks about 5
  • 2½ tbsp curry powder
  • 3 tsp sea salt
  • 2 tsp ground cumin
  • 1 tsp fennel seeds
  • ½ tsp fresh cracked pepper
  • 1 lb red and yellow potatoes chopped
  • 4-5 carrots peeled and chopped
  • 3 cups water
  • 1 chili pepper diced
  • 2 cans coconut milk
  • ½ cup cilantro chopped
  • 2 limes juiced
  • 2 chicken breasts cubed
  • 1 tbsp tamari

The Process

The show starts about 3:30 Hawaii time, and that’s about when I got this recipe started. I peeled a handful of ginger, about 5 cloves of garlic and half a large sweet onion. I also peeled about 5 medium carrots and washed a bunch of baby red and yellow potatoes.

Next, I got out my soup pot and added a heaping spoonful of butter and coconut oil over low heat. Once I heard that start to sizzle, I added the diced onion and garlic. Then I cut the ginger in matchsticks and across in tiny pieces, leaving a few matchsticks whole for random bursts of flavor. I gave this a stir and by this time my house smelled like home cookin’ and Phish was playing the same songs we just saw at The Gorge. That’s when I realized, I was exactly where I was supposed to be.

At this time, I added 5 chicken drumsticks, coated them with sea salt, curry powder, fennel seeds, ground cumin & black pepper.

Once I smelled the spices come together, I gave this a stir and added some water to bring this creation to a sweet simmer.

Next, I carefully chopped a spicy Serrano pepper and added it to the pot with a can of coconut milk.

Simmer Down

After about an hour of dancing in my living room, I went back to the kitchen and tasted the savory stew. I added some tamari, the juice of one lime, a handful of chopped cilantro and one more can of coconut milk.

Next, I chopped a couple chicken breasts. There were both kinds of chicken in the fridge. I usually am frugal and try to plan a couple meals with the meat on stash, but I really wanted to make the best Chicken Curry Recipe Ever….. so I went ahead and used both.

First I coated the chunks of chicken breast with more lime juice and sea salt before adding it to the stew.

Set Break

I let the stew cook for about 30 more minutes, til the chicken breast was perfectly cooked and the meat from the drumsticks fell off the bone as I pulled each one out with a pair of tongs.

At this time, Reba took a ladle….

I served this chowder like curry with warm naan bread I whipped up during set break. (For the first time ever btw….. I’m telling ya, tour really got me back to me, creative and hungry.) Thank You Phish ❤️

  • 3 tbsp butter

  • In a large pot or dutch oven melt butter and coconut oil over low heat.
  • Add onions, garlic and ginger and cook for a few minutes until soft and fragrant.
  • Add the chicken drumsticks and cover with salt, curry powder, cumin, fennels seeds and fresh cracked pepper.
  • Increase the heat to medium and turn the chicken drumsticks until completely coated with spices.
  • Add potatoes and carrots and give them a stir.
  • Add remaining ingredients and bring to a low boil.
  • Turn heat to low and simmer for an hour.
  • Remove chicken bones, shredding off all the meat into the stew.
  • Season to taste and serve with rice or naan bread.
  • Enjoy!
