At Mana Juice Bar in Kona we called this smoothie the Waipio (why-a-pee-o) named after the most beautiful valley in Hawaii. When visiting Waipio, it’s good to nourish your body properly to enjoy all the adventure the valley has to offer. This smoothie is not only packed full of energy, it’s delicious and nutritious.
This smoothie recipe starts out with spinach and granola right into the blender. Topped with organic frozen blueberries and frozen banana before blended with almond butter and almond milk.
I like to freeze fresh organic spinach. It’s cheap in the store when you buy it in bulk. Stash it in the fridge and make a couple salads. As soon as it looks like one leaf is turning dark green, toss the whole bag in the freezer. After the spinach is frozen, you can crush it up by squishing the bag in your hands. Now it’s ready to scoop out and add to smoothies, soups and casseroles.
When using spinach in your smoothies make sure to add it first to the blender. Then top with the remaining ingredients for easier blending.
Add almond butter using a large soup spoon or cookie scooper. Try to get the almond butter in the center of the blender so it does not stick to the sides.
Now cover the fruit with almond milk, about 1 cup.
Feel free to add your nutrition needs to this mix like chia seeds, protein powder or my favorite, cocoa nibs.
What I love most about smoothies, besides the cold yummy taste, you can pack a lot of nutrition without having to eat a huge meal.
